These little things are yummy 🙂  Unfortunately, I didn’t have an oven at the time, since my ignitor was broken, so I was using a toaster oven and didn’t have a small mini muffin pan. I found a nice way around that. I have this really spiffy donut maker. Worked like a charm!!! We didn’t even dip these in syrup or anything, we just ate them fresh off of the donut maker..lol. You can find more great recipes and product reviews from our friends at the Village Bakery!
Mini Pancake Muffins
1 c flour
1 tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
2 T sugar
2/3 c buttermilk
1 egg
2 T maple syrup
2 T melted butter
½ c milk chocolate chips
 
Preheat oven to 350 degrees. Combine flour, baking soda, baking powder, salt and sugar in a medium bowl. Sift it together with a whisk.
In another bowl, stir buttermilk, egg, maple syrup and melted butter until combined.
Add the buttermilk mixture to the flour mixture and stir until combined. Stir in chocolate chips.
Pour batter into mini muffin tin and bake for 8-9 minutes.
